どんこ汁

どんこは、見た目あまり美味しそうには見えませんが、

だしとしてかなりいい仕事してくれます。

特に冬は脂がのっていて、と〜っても美味。

ドンこの脂の甘さと冬の野菜の甘さがとってもよくマッチします。


Donko soup is a soulfood of Tohoku people

especially for those who live near the ocean, Sanriku.

Donko(Dark Sleeper) is a fish that tohoku people love.

It does not look pretty, but it play a really important rule in Soup.

Donko that is caught in winter is really fat.

The sweetness from the fat and the sweetness of winter bveggies really goes well.


Donko Soup recipe

1 Prepare the Donko

Remove the Uroko, and cut them in pieces

(I get the one which is already clearn, easy to use)


2 Cut veggies

I like to put Daikon, Carrots, Yuzu(citrus which clean away the fishy smell), and Tofu.


3 Boil them

In a pot, pour the water and bring it to the boiling point.

then, put Konsai, the ones that is not easy to heat like Daikon

then, put Donko and kimo, the liver.

put other veggies.
